If your an onion lover like me, than this is a must try recipe for you. French Onion and Lamb Skillet Casserole adapted this title for a reason. A common quality amongst skillet recipes is the fact that a lot of them are one pan meals, which is such a GREAT quality. I mean is there anything better? All ingredients thrown together to maximize flavor combination, and little clean up in the end. Yah I don’t think it gets better then that.
This recipe is inspired from french onion soup, but it’s just not quite the same. The addition of ground up lamb and orzo is a must, but it changes up the consistency while also adding new flavors you won’t find in a french onion soup. The cheese and amount of onions however is worth name dropping french onion.
So here’s how it goes. Start by, of course, caramelizing those onions to perfection. You gotta baby them thought so stir them frequently. Set those onions aside, and brown your lamb in the same pan. Once the lamb is cooked, you’ll slowly start to stir in remaining ingredients in order (refer to recipe card below) and top it all off with gruyere cheese and the bread crumb mixture.
That’s pretty much it for this French Onion and Lamb Skillet Casserole. With 5 minutes of prep and 30 minutes of cook time, not only is it easy and delicious it can be on your dinner table in 35 minutes. Such a perfect recipe as life can just get crazy sometimes. And you never know when that will be, so keep this recipe in your weekly meal rotation for the day when life hits you like a ton of bricks. Because haven’t we all experienced that?

- 2 tsp olive oil
- 1 large onion, sliced
- 1 lb ground lamb
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cloves garlic, minced
- 1 tbs worcestershire sauce
- 16 oz orzo pasta
- 32 oz chicken brother
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- 1 cup gruyere cheese, shredded
- 1/2 cup bread crumbs
- 2 tbs butter, melted

- Heat oil in a large deep skillet over medium heat. Add the onion slices and cook for 10 minutes, stirring often. The onions are ready when they turn golden in color and are very soft. Remove the onions and set side.
- Add beef to the same skillet. Brown the beef and season with salt and pepper. Stir in garlic and Worcestershire sauce. Add dried orzo. Return onions to the pan and add the beef broth and fresh herbs. Reduce heat to medium, low, cover and cook mixture for 10 minutes or until the pasta is al dente and the liquid has absorbed.
- Sprinkle Gruyere over the top of the casserole. In a small bowl, stir together the melted butter and the breadcrumbs. Sprinkle breadcrumbs over the top of the skillet and place under the broiler until the breadcrumbs are slightly toasted and the cheese is bubbly.
