Welcome back, and I hope everyone had a great weekend. I don’t know about you but I indulged a whole lot this weekend, more than I should have. Full disclosure? I was introduced to the burger lounge on sunday, and they make some of the best burgers, fries and onion rings I’ve had in awhile. See how I subtly snuck in there I had both fries and onion rings? God it was good, but I am paying for it today. Which is why this Easy 10-minute Greek Salad couldn’t have come at a better time.
With simple ingredients and easy prep, there’s never been a more perfect salad recipe. A this one really hits home for me. This is another one of those recipes my mom used to make for my brother and I growing up. Over and over and over again, but it never got old. Still isn’t. I think that says something about recipe you know?
So yes, I may be partial to this Easy 10-minute Greek Salad in the sense that it reminds me of my childhood, I mean who doesn’t like to feel like a kid again. But everyone needs to get on this bandwagon of simple, light, and a clean eating kind of recipe.
4 ingredients topped with a light greek feta dressing never tasted so good. It’s loaded with cucumber, cherry tomatoes, thinly sliced onion (emphasis on the thinly sliced), and a ton of feta cheese (my favorite part). See, simple.
Perfect for busy work weeks, consider this salad for lunch or even a light dinner if that’s what your in the mood for. Feel free to prep this salad (dressing and all) in advance and enjoy it later that day. You will find it doesn’t get soggy and only gets better the longer it sits in the delicious dressing. - 1 large cucumber
- 1 1/4 cup cherry tomatoes
- 1 small onion,
- 1/2 cup tradtional feta cheese
- Girard’s greek feta dressing
Ingredients

- Small dice the cucumber, cut the cherry tomatoes in half, thinly slice the onion, and add crumbled feta (we used a block of feta and cut into small cubes).
- Top and toss with your greek feta dressing, we usually use about half the bottle but to each their own. You can either enjoy it immediately or let it sit in the fridge for up to 24 hours.
