Happy Monday everyone! Our blog post couldn’t be more perfect for today. After a weekend of eating everything under the sun, which may or may not have included a cheeseburger from In N Out, a healthy snack is exactly what we need today. OK so the cheeseburger totally did happen, and i’m feeling really guilty about YIKES! What is it about the weekends that makes us crave meat, cheese, and bread? Am I am the only one here?! Not saying that I don’t crave these things during the week, but I always justify my bad eating choices with “it’s ok because it’s the weekend” or “it’s a cheat day eat kind of weekend.” Whatever the reason, having cheat days now and again is fine as long as it’s kept to a minimum and followed by lots of healthy foods. Which brings us back to our post for today.
Feast your eyes on these easy to make hummus boats that can be thrown together in a flash. With this month already off to a busy start, we opted to prepare these with our favorite pre-made garlic hummus from Sprouts Market. However, some of you have a homemade hummus recipe that would also work great for this. Be sure to pipe the hummus in your cucumber halves with a zip lock bag, it’s definitely the easiest way.
We topped our boats with bean sprouts, shredded radish, and a sprinkle of paprika. So delicious, but feel free to get creative with different toppings and/or use ingredients you already have in your fridge. A few good examples are shredded carrots, chopped onion, small diced cherry tomatoes to name a few. With a simple recipe such as this one, the fun part is to figure out what combination works best for your taste buds. And once you do, it’s too easy not to add to your weekly meal plan.
