It doesn’t get more simple than this crunchy asian ramen noodle salad, which is exactly what we need this week. It’s been busy to say the least, and we are so grateful for easy to make and delicious recipes like this one. There is so much about this that reminds me of my childhood, and I am all about those nostalgic feels.
Who didn’t eat ramen at one point or another. For me, it was definitely pre teen, however I reintroduced it to my diet in college (typical, right?). I feel like that last one most people can relate too. Ramens cheap, and it’s tasty; need I say more. I am not going to lie, when I found this recipe, the child in me giggled with excitement that I’d be able to have uncooked crunchy ramen again! And this recipe is made better with the addition of mango, avocado, sliced almonds, edamame, green onion, and coleslaw. Now that’s a fully loaded salad!
So, it’s Wednesday, and what are you having for dinner? Crunchy Asian Ramen Noodle salad perhaps? I think next time I’d like to add some chopped chicken and get some more protein in there. Something to think about if you’ll be making this soon. Would be an easy addition to an already easy to make recipe. - 1 (16 ounce) bag of coleslaw mix
- 2 (3 ounce) packages of ramen noodles, crumbled (do not use the seasoning packet)
- 1 cup shelled and cooked edamame
- 1 avocado, peeled, pitted and diced
- 1 mango, peeled, pitted, and julienned
- 1/2 cup thinly sliced almonds
- 1/2 cup thinly sliced green onion
- 1/2 cup avocado oil (or vegetable oil, or any cooking oil)
- 1/4 cup honey (or more to taste)
- 1/4 cup rice vinegar
- 2 tsp soy sauce
- 1/4 tsp Sesame Oil
- salt and pepper, to taste

- Add ingredients (including the vinaigrette) together in a large bowl, and toss until combined.
- Serve immediately, or cover and refrigerate for up to 3 days. Noodles will loose there crunch after the first day, but it's still delicious.
- Whisk all ingredients together until combined.
