We’ve been on a soup bender if you haven’t noticed, and we are more addicted to them as ever. There is just something about a warm bowl of savory goodness to take the edge of from a stressful week. And this Cream of Mushroom Soup definitely did the trick.
It’s just been one of those weeks you know? From the start of the Holiday madness, to the wildfires raging near us and friends/family, to everything else that has to get done on the day to day. The day to say we can handle, it’s adding in everything else where things get overwhelming. Listen to me, I am complaining and I still have a home to go to at the end of the day. Can’t say that for a lot of people in Southern California. Talk about perspective. No matter where you are, all you have to do is turn on the news and you’ve heard about the fires; as well as all the devastation affecting too many.
So yes it’s been a rough week, but it can always be worse. California is strong, and we will rebuild. Now that’s a better attitude. What’s causing these fires is a severe Santa Ana wind event. Now I am not a weather expert, but I always thought Santa Ana winds brought warm temperatures. While it is starting to warm up in our neck of the woods, when all this broke out last Monday, it was freezing and all I wanted was soup!
Which brings us to our latest favorite, a killer recipe for Cream of Mushroom Soup. And yes that is our Easy Cheesy Bread Cubes you see pictured, it was absolutely delicious with this recipe. We say latest favorite, because we’ve made quite a lot of soups lately, and each one is better than the next. See a recap of our top 5 favorite soups below.
- Tomato Soup with a Grilled Cheese
- Shrimp Bisque (my personal favorite!)
- Chicken Gumbo
- Split Pea Soup
- Cream of Asparagus Soup
Part of the reason for all the soups too is we are trying to cook through most of the soup section in the “Joy of Cook” cookbook before it’s no longer soup season. We made some slight changes to the original recipe, but feel free to compare; recipe on page 183. If you’re just tuning in, be sure to check out our post explaining in detail Our Journey into the Joy of Cooking.
That concludes our post for today, let us know by commenting below if you have any questions or just want to chat. We LOVE to chat! Happy cooking friends!
