If you hadn’t noticed, we have already started planning our game day menu for the upcoming super bowl 52! The most fun about the super bowl, is the food of course. I always find it funny how we try to keep it healthier, but somehow some not healthy goodness gets sneaks in there. But at least we try right? Our recipe today is not the worst for you, but it’s also loaded with mayo which is you know, not so great for you. Feast your eyes on these oh so delicious Chicken Salad Lettuce Cups that I cannot wait to chow down on next weekend.
Is it bad we justify not feeling so guilty because we eat them out of lettuce cups, HA! Don’t worry, we’re not that in denial. The best part about this recipe, is getting to use leftover chicken. Personally, I always have shredded chicken in my fridge. We’ve share quite a few recipes that utilize leftover chicken like our Southwestern Chicken Skillet and Chicken Enchilada Roll Ups to name a few. Two of my favorites that I make on the regular.
Just like the Chicken Salad Lettuce Cups, those Chicken Enchilada Roll ups are great to keep in mind for a tasty snack that feeds the masses. Not even just for Super Bowl food, but for fun weekend gatherings as well. Maybe you have some friends coming over this weekend, or are looking for something tasty to bring to a party you’ve been invited to. Keep these recipes in mind for sure.
On a different note, who is excited it’s Friday! This girl over here! For once, I have some super fun plans for the weekend, including heading up to Oxnard this weekend to visit Sammy and her boyfriend Steven. It’s not often I make my way up there, which is terrible because she is down here every week. However, I am pleased to say that our visit is not work related. it’s just going to be pure fun. What are we doing? Eating of course! We have yet to decide on a place for lunch, but be sure to tune into any instagram stories for the big reveal.

- 2 cups cooked chicken, diced or shredded
- 1 cup celery, small diced
- 1 cup mayonnaise
- 1 tbs chia seed
- 1 tbs hemp heart
- salt and paprika to taste
- serve in lettuce cups
- french dressing
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 cup vinegar
- 1/4 tsp mustard
- 1/4 tsp lemon juice
Ingredients
For Chicken Salad

- Combine diced or shred cooked chicken (we used leftover rotisserie), and diced celery in a bowl, and set aside in refrigerator.
- Make french dressing by adding all ingredients in a small bowl, and mix until fully combined.
- Add to bowl of chicken and celery, french dressing, mayonnaise, chia seed, hemp heart, salt, and paprika.
- Mix well, and spoon into lettuce wraps.
- Serve immediately, and enjoy!
