Hi everyone, we hope you all had a fun and exciting Easter weekend. Oh and it was coachella this weekend too! We didn’t attend ourselves, but I am sure a lot of you did, and can only imagine how those of you must be feeling today! Exhausted is an understatement for sure. It’s fun and eventful weekends like this that always make starting off your week that much harder right?! We wish there was some secret you know, a cure for the Monday blues is exactly what we need right now.
Our post for today couldn’t be more perfect, because this buffalo chicken skillet is one of the easiest recipes we’ve shared in a while. Thank god for meals like this! We are tired, have tons of work to do, and worrying about what’s for dinner is the last thing we want to be thinking about. And with the amount that we ate out this weekend, we feel so guilty and that is not even close to being an option for us tonight. If this is you, worry not! An easy to make dinner is exactly what the doctor ordered. This buffalo skillet is a 30 minute one-pan dish that is incredibly flavorful with it’s spicy buffalo sauce that is just spicy enough without being over the top. Add a hint of ranch, and some crumbled blue cheese on top, doesn’t get better than that. Oh, and did we mention the recipe calls for store-bought rotisserie chicken? Not only is the store bought whole chickens so tasty, it makes this recipe that much quicker to prepare. Of course you can make your own, but for the sake of making things easier, this is the obvious route.
