Hey guys, so we are drooling over our blog post today, literally. Today we bring you a unique twist on a BLT sandwich, one of my favorites! Growing up my mom used to make the best BLT’s for my brother and I. Of course that consisted of a piece of lettuce or two, a slice of tomato, and like 6 slices of bacon lathered up with mayonnaise on white bread. So much YUM! Brings be back to my childhood for sure, but my metabolism was a lot more forgiving back then. I love a good BLT, but all that white bread and mayo isn’t something I can eat on the regular anymore, and nor should I. This BLT summer roll is a great alternative, and dare I say better? Sorry mom!

While the ingredients are mostly the same (because there was no way bacon was being removed from this equation), replacing the bread and mayo with rice paper and an avocado dipping sauce changes things up a bit. It’s a lighter and refreshing version of an old favorite totally guilt free. And have we mentioned how much we love rice paper! Sammy and I went on an adventure to find a specialty marketplace for Japanese foods, and boy did we find an amazing place. In search of rice paper, we found Mitsuwa Marketplace in Santa Monica and it had everything we needed and more. We even took home some fresh made sushi for lunch and never have I ever been offered soy sauce and chopsticks at checkout. Not that I’ve spent much time searching for a specialty marketplace such as this one, but now I want to! If you’re ever in the area, I highly recommend stopping in and checking out this place. It’s clean, produce is fresh, and everyone is super friendly.
Went off topic a bit, but we ended up finding the rice paper we needed, and had a blast putting together these summer rolls. Rice paper needs to be soaked before using, but be careful not to let them soak to long. Not going to lie, we ripped a few of them, which is easily done if you they are over saturated. And we highly recommend using super crispy bacon for this recipe, it needs that added crunch. Be sure to remember this recipe for your next summer party, people will love it! Happy eating everyone!

- 1/2 Avocado
- 1/4 cup crème fraîche
- 1 tbs fresh lemon juice
- 4 mint leaves
- kosher salt
- freshly ground black pepper
- 6 rice peper rounds
- 12 baby romaine lettuce leaves
- 6 slices of cooked bacon
- 1 large tomato, seeded and diced

- In the bowl of a food processor - add the avocado, creme fraiche, lemon juice, and mint. Add 1 tablespoon of water at a time until you reach your desired consistency. Add salt and pepper to taste. Refrigerate until ready to use.
- Fill a large bowl with room temperature water. Working with one rice paper wrapper at a time, dip it into the water so the entire round is submerged. As soon as you have wet the entire round, remove it from the water and lay it on your work surface.
- Place a lettuce leaf in the center bottom ⅓ of the wrapper. Then top with the a slice of bacon, some diced tomato, and top with another lettuce leaf.
- Fold each side of the wrapper over the filling. Then roll up from the bottom, while using your fingers to compress the filling into the wrapper - roll tightly.
- Slice in half and serve with the avocado dipping sauce and enjoy!
