I am overjoyed to say that it’s starting to feel like summer in my neck of the woods, WOO HOO! Perfect timing to share my new favorite summer pasta salad. If you haven’t noticed, a recent trend of ours on the blog has been quick and easy to make recipes. To prove our point here’s 3 of our latest recipes that can be prepped and cooked in a hot minute.

And that’s not only because it’s what we think our readers want to see. We have found ourselves busier than usual this summer, and it’s been quite the juggling act. Sammy and I have had to cram 5-6 recipes in on one shoot day. That means prepping, styling, shooting (and eating of course, but that’s optional) each recipe in roughly 8 hours. IT’S BEEN NUTS! But so rewarding to know that we are efficient enough to get the job done. It’s crazy how many hats a food blogger can wear in a day. In a day’s work you take on the role of an assistant, a chef (or sous chef in my case), a stylist, and a photographer. And let’s not forget a writer as well. After a day like that, who wouldn’t want a delicious recipe that can be thrown together in a flash. If this is you, rest assure you are reading the right blog post right now.

With perfect summer ingredients such as cherry tomatoes, green onion, chopped cilantro, bacon, whole wheat bow tie pasta, avocado chunks, topped with an avocado dressing; not sure it get’s more summery than that! Or even tastier than that! And of course, very quick and easy to make. Did we mention it’s quick and easy to make? Lol, alright you get the point, and we sounds like a broken record!

- 8 oz whole wheat bow tie pasta
- 1 cup cherry tomatoes, diced
- 8 slices bacon, cooked crisp and crumbled
- 1 green onion, thinly sliced
- 2 tbs chopped cilantro
- 1 avocado, diced
- 1 tsp lime juice
- 1 rip Avocado
- 1/2 fresh lime, juiced
- 1/4 cup chopped cilantro
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 cup buttermilk
- salt and pepper, to taste

- Place all dressing ingredients in a blender and process until smooth.
- Cook pasta according to package directions. Drain and run under cold water.
- Toss diced avocado with lime juice.
- Combine all ingredients in a large bowl gently toss with dressing.
