Happy Monday everyone! As mentioned in our Orange Pineapple Creamsicle Mimosa Post on Friday, it’s going to be a week filled with bbq recipes. I don’t know about you, but I love me some sweet home cooked bbq. Get excited because it’s going to be a delicious week!

We are starting off with slow cooked bbq pulled pork stuffed yams. Yup, you read that correctly, pulled pork stuffed inside a yam. Here it is, moment of truth…this recipe did not go as planned. We initially we’re going for bbq pulled pork stuffed sweet potato (a very popular summer recipe) but instead we ended up with yams, and here’s why.
On occasion, when life gets crazy, i’ll place an order on Amazon’s service Prime Now to avoid the crazy market rush. Each area is different, but they deliver groceries from Sprouts Market straight to my door in roughly 2 hours. It’s pretty awesome, and hard to resist using this hassle free service. And for someone who cooks as much as I do, there are days where market shopping becomes a daunting task. The gamble in using such a service is sometimes they make mistakes and bring you yams instead of sweet potatoes, OOOPPS! I am happy to report this was a surprisingly scrumptious OOOPPS. Sammy and I knew immediately the mistake that had been made, but we decided to run with it. And I am thrilled we did. The tart flavor of the yam mixed with the sweet bbq flavor from the pulled pork is incredibly tasty, and something I would have never thought to try. So, thanks amazon? It’s frustrating when things don’t go as planned, but that’s life right? Just gotta roll with the punches, and keep on keeping on. At least we ended up with a unique recipe. That silver lining is everything! Lastly, we topped off these stuffed yams with a homemade ranch recipe that will be featured on the blog tomorrow, YUM!

- 2-3 lb pork shoulder
- 1 tsp garlic salt
- 1 tsp Hungarian paprika
- 1/2 tsp chili powder
- salt and pepper, to taste
- 1.25 liters coca cola (or enough to cover ¾ of the pork shoulder)
- 3/4 cups bbq sauce (more or less to taste)
- 5 yams
- olive oil (to brush on outside of yams)

- Place pork shoulder in slow cooker.
- Rub pork shoulder with garlic salt, paprika, chili powder, salt and pepper.
- Cover ¾ of the pork shoulder with coca cola (root beer works too).
- Cook on low for 8 hours or high for 4-6 hours.
- Shred pork shoulder and add bbq sauce, mix well.
- Preheat oven to 400 degrees.
- Poke yams with a fork.
- Lightly brush olive oil over yams.
- Wrap yams in foil (optional), and bake in oven for 30 minutes or until easily pierced with a fork.
- Turn off oven, and allow to sit for 5-10 minutes.
- Carefully remove foil, and when cool enough to handle, scoop out some of the center to make room for pulled pork.
- Top with ranch if your desire and serve immediately!
