It’s Monday, and I got to say as far as Monday’s goes, this one ain’t so bad. Not all Mondays are created equal. Some are painful, some are just alright, and some are just downright motivating. After a rough pregnancy week last week, today gives me hope this week will be better. Last night, my husband and I felt our baby kick for the first time, so maybe that has something to do with my good mood (of course I’ve felt flutters, but this was a full on kick). That and it’s my two year anniversary today. Those are just some things on the mind today. Well that and food of course, but that’s a given these days. Bringing us to the delicious chicken recipe on the blog today. Chicken has always been a favorite, but lately the craving is real. This Baked Honey Soy Chicken recipe I literally ate for days and I was so good with that.
When the question is dark meat or white meat, my answer is always dark meat. So what’s your favorite? I can say with absolute certainty that this dish made of all drumsticks couldn’t have been better, but the soy, honey, and rice vinegar marinade could be applied to any part of a chicken you desire. With an adjustment to cook temperature and time of course.
But since we’re talking drumsticks, these take a hot minute in the oven to cook. While prep could go faster, it’s worth it to whip up your marinade and let the chicken sit in the juices for at least 30 minutes. I let mine sit for 2 hours, but I am always trying to get a head start on dinner prep. Baked Honey Soy Chicken couldn’t be easier or tastier served over a bed of white rice. It’s the perfect weeknight dinner that feeds and pleases a crowd.
