What better way to start off this week’s blog post then with BACON! This is a wonderful recipe because of its changeability. Once you’ve finished making the bacon cup, you can add just about any topper you can dream of. Personally my two favorite toppers are mac n cheese and barbeque baked beans. If you have not had one of these yet, beware; you will not be able to stop eating these scrumptious treats.

Mac N Cheese Bacon Cups
The mac n cheese bacon bites are incredibly delectable, and let me tell you, so easy to make! Follow the steps from the bacon bite post, and then prepare your mac n cheese. Once everything is cooked top the bacon bites with your mac n cheese and serve immediately.
BBQ Baked Beans
The bbq baked bean bacon bites are equally as tasty if not tastier than the mac n cheese bacon bites. To create these gems, prepare your bacon bites and cook up your favorite brand of bbq beans, my favorite is Bush’s bourbon and brown sugar. Chop up some green onion, as much or little as you desire. Finally top the bacon bites with your beans, a bit of shredded Mexican style cheese, and garnish with the chopped green onion. I haven’t tasted an appetizer this good in a long time; I hope everyone enjoys it.

- 12 slices bacon
- 1 mini muffin pan
- 1 regular cookie sheets
- 12 Baking cup liners
- Mac n cheese
- BBQ baked beans

- Pre-heat the oven to 350 degrees. First place the muffin pan upside down on a cookie sheet. Then cut the Bacon into 3-inch long strips and lay the slices down perpendicular to each other on an upside down mini muffin pan creating the bacon bites.
- Once your bacon is in place, press a baking cup liner over each bacon bite. Then place another baking sheet on top with the non-stick side face down. Bake to the desired crispness, which will most likely take 1-1 ½ hours.
- Fill with Mac n cheese or BBQ baked beans
