It’s true what they say about breakfast being the most important meal of the day, an Ideal ingrained in us since childhood. But for some reason, we find ourselves very picky when it comes to what were willing to eat first thing in the morning. You see, the mornings feels like a battle to us. You wake up to that obnoxious alarm, which has to be otherwise we would never wake up, and of course our natural reaction is to hit that wonderful snooze button. But then that’s when the battle begins right? Every few minutes your alarm continue to goes off, and all you want to do is keep hitting that snooze button, but you know the right thing to do is to get up. Every morning like clock work, this is the routine. And all we want to do sometimes is to sleep until lunch time Ha! I swear if the alarm could speak, every morning it would say, “Wake up, and welcome to your adult life!” Don’t you just want to chuck that thing across the room sometimes!? We’d be lying if we said that hasn’t happened before, real talk!
Alright so rant over, thanks for listening. Let’s get back to the real reason for this post today. We mentioned we’re super picky about what we eat, but this avocado baked egg is something we always crave. It reminds us of a bread-less eggs in a basket, which we also love, but this is something you can eat on the regular and not feel bad. It’s incredibly easy to make, and this is a must when you’re having to cook before you’re fully functioning. It’s definitely not one of those recipes you can prepare in advance, it’s best when served fresh. And boy is it refreshing! Not too heavy, but filling enough to comfortably tide you over till lunch time. And keep in mind it’s a great recipe for one, but it’s also great for a big group as well. Be careful not to overcook, the runny yolk is where it’s at! Happy cooking everyone!
